This porridge is probably my favorite type of porridge. The recipe comes from my mother . I love it because it’s really good for you and it’s filling. It’s also a way that I can spread my culture to you guys! I hope you enjoy this porridge from my very cherished culture.😉
The three stages of Haitian porridge:
Hatian porridge recipe
5 cups of water
5 star anise
3 cinnamon sticks (or a tsp. of cinnamon powder)
a pinch of salt
3 green plantains
one 12-ounce can of evaporated milk
sugar to taste; about a half cup
1 tsp. vanilla extract
In a large pot, add the water, cinnamon sticks, star anise, and boil on medium heat while you prepare the plantains.
Chop the plantains into fourths and put them in he blender skin on. Blend until smooth.
Add your blended plantains to your pot with the water mixture and stir.
Cook in medium high heat until boiling. Scoop off excess foam if desired, this doesn’t affect your end result.
Be sure to watch you porridge, because you don’t want it to bubble over!!
Coninue to cook on low for 10 minutes, and mix thoroughly.
Repeat this process two more times.
Strain the porridge into a large bowl with a fine mesh strainer. Be sure to get out all the anise and cinnamon sticks. Add the strained porridge back into the same pot you cooked it in.
Then add the milk, vanilla, salt, and sugar.
Stir and cook on low heat stirring occasionally for 5 more minutes to make sure all your ingredients are combined.
Cool and serve.
Store your porridge in a bowl in your fridge. Keeps in the fridge for up to two days. Reheat in the microwave or on your stove.
